HR mi no kno how long yu deh a babylon but I was still in high school in the 70's and oxtail was the lunch of choice for most of us. My mom did not like it so it was not cooked often at home. I think it was imported even then and the 70's was not really the time of imported food consumption. However, if yu was npt prdering or eating oxtail yu was considered not it. The two main ways was the plain oxtail with the little long dumplings or oxtail and borad beans.
Wait little HR, mi no think we even raise ox dung deh so nu mix it up with cow tail for that was a different story though pretty much prepared the same way.
Who can tell mi what fi du wid a goat head? Mi brother-in law is a devout adventist and have one farm and raise corn fed chicken and strictly hay fed animals ( doe dem no eat meat except fi fish, turkey and chicken on occasions). Him regular job is at the Agricultural college so him just butcher one goat and out of fun send the head come gi mi ( him never know fi send the foot wid it). Now mi bredda scrape the goat head fi mi and mi no know what next fi du. Dem sey mi deh pon mi own after that for mi shudda know. Always we get it come ready done.
Hey PC nuh badda tell mi leaving out di most important part yu kno.
