This one seems to work - I must admit that I do the same thing as you, but as I am not a sorrel lover, I am convinced I never get it right with the dry sorrel. The green sorrel, well then, I can handle that - no problem. This one though is from a professional.
8 cups dried sorrel petals
1/2 cup frated ginder
2 doz. pimento seeds
12 cups boiling water
1/4 cup rum (or more if you can handle it)
Sugar to taste
This serves 12 people. Personally I always add a few cloves and rice grain after it is sweetened and leave them in. Of course, don't ask mi how much - just a good guesstimate will do. I would say about 1 teaspoon of the rice (uncooked) and whatever cloves come up in a pinch of the fingers.
